Chicken Cheddar Cheese Lasagna

  • 1/2 pound [227 g] lasagna noodles
  • 2 tablespoons [30 mL] butter
  • 3 cups [750 mL] turkey, cubed [or chicken]
  • 2/3 cup [160 mL] onion, chopped
  • 1 1/2 teaspoons [7.5 mL] garlic powder
  • 1/2 teaspoon [2.5 mL] salt
  • 1 pinch pepper
  • 16 ounces [455 mL] tomato sauce
  • 2 cups [500 mL] tomato juice
  • 1/4 cup [60 mL] Parmesan cheese, shredded
  • 1/2 teaspoon [2.5 mL] oregano
  • 3/4 cup [190 mL] cottage cheese
  • 3/4 cup [190 mL] Cheddar cheese, shredded
  • Preheat oven to 375°F [190°C].
  • Cook lasagna noodles.
  • Rinse and drain well.
  • Set aside.
  • Heat butter in a casserole dish.
  • Add turkey, onions and 1/2 teaspoon [2.5 mL] garlic powder.
  • Season with salt and pepper.
  • Brown over medium heat.
  • Add tomato sauce, tomato juice, pepper and parmesan.
  • Season with oregano and remaining garlic powder.
  • Bring to a boil and reduce heat immediately.
  • Cover and simmer 20 minutes.
  • Place 1/3 of the lasagna noodles in a shallow, greased dish [13 x 10 inches / 33 x 25 cm].
  • Place, alternating, half the sauce, 1/3 of the lasagna noodles, cottage cheese, remaining lasagna noodles, and remaining sauce.
  • Sprinkle with shredded Cheddar cheese.
  • Cook 30 to 40 minutes.
