Creamy Vegetable Fettucini

  • 1/2 pound [227 g] fettucini noodles
  • 1 cup [250 mL] broccoli florets
  • 1 cup [250 mL] skim milk
  • 8 3/4 ounces [248 mL] light cream cheese, cubed
  • 4 green onions, chopped
  • 1/2 teaspoon [2.5 mL] Italian seasoning
  • 1/4 teaspoon [1 mL] garlic powder
  • 1 cup [250 mL] turkey breast, cooked or smoked, cubed
  • 1/4 cup [60 mL] Parmesan cheese, shredded
  • Shredded Parmesan cheese
  • Cook pasta according to package instructions, adding broccoli during last 5 minutes.
  • Drain and set aside.
  • Place milk, cream cheese, onions, garlic powder and Italian seasoning in a casserole dish; cook over low heat until unctuous.
  • Incorporate turkey and Parmesan cheese.
  • Mix pasta and vegetables with sauce.
  • Sprinkle with shredded Parmesan cheese.
