Fettuccini with Creamy Ham Sauce

  • 12 ounces [340 mL] concentrated skim milk
  • 2 teaspoons [10 mL] cornstarch
  • 1/2 teaspoon [2.5 mL] dry mustard
  • 1/4 teaspoon [1 mL] salt
  • Pinch of pepper
  • 1/3 cup [80 mL] Swiss cheese, shredded
  • 1 cup [250 mL] cooked ham cut in thin strips
  • 1 cup [250 mL] cooked broccoli or cauliflower, cut in small pieces
  • 1/3 cup [80 mL] canned sliced mushrooms, drained
  • 3 cups [750 mL] cooked fettucini, drained
  • 2 tablespoons [30 mL] green onion, chopped [optional]
  • Mix together concentrated milk, cornstarch, dry mustard, salt and pepper; heat over medium heat, stirring, until preparation thickens and simmers.
  • Continue cooking 2 minutes, stirring.
  • Incorporate Swiss cheese and stir until melted.
  • Add strips of ham, broccoli or cauliflower and mushrooms; heat while stirring.
  • Pour preparation over warm fettucini.
  • Sprinkle with chopped green onion if desired.
