- 12 ounces [340 mL] concentrated skim milk
- 2 teaspoons [10 mL] cornstarch
- 1/2 teaspoon [2.5 mL] dry mustard
- 1/4 teaspoon [1 mL] salt
- Pinch of pepper
- 1/3 cup [80 mL] Swiss cheese, shredded
- 1 cup [250 mL] cooked ham cut in thin strips
- 1 cup [250 mL] cooked broccoli or cauliflower, cut in small pieces
- 1/3 cup [80 mL] canned sliced mushrooms, drained
- 3 cups [750 mL] cooked fettucini, drained
- 2 tablespoons [30 mL] green onion, chopped [optional]

- Mix together concentrated milk, cornstarch, dry mustard, salt and pepper; heat over medium heat, stirring, until preparation thickens and simmers.
- Continue cooking 2 minutes, stirring.
- Incorporate Swiss cheese and stir until melted.
- Add strips of ham, broccoli or cauliflower and mushrooms; heat while stirring.
- Pour preparation over warm fettucini.
- Sprinkle with chopped green onion if desired.
