Bolognese Fettucini

  • 1/3 cup [80 mL] onion, chopped
  • 1/3 cup [80 mL] celery, diced
  • 1/3 cup [80 mL] carrot, chopped
  • 2 tablespoons [30 mL] butter
  • 1 pound [454 g] ground beef
  • 1 tablespoon [15 mL] oregano
  • 1/4 cup [60 mL] dry white wine
  • 2 teaspoons [10 mL] salt
  • 1/4 teaspoon [1 mL] black pepper
  • 28 ounces [796 mL] canned tomatoes
  • 1 pound [454 g] fettucini
  • 1/3 cup [80 mL] Parmesan cheese, shredded
  • In a large dish, brown onion, celery and carrots.
  • Add meat, oregano and brown, stirring.
  • Add wine and seasonings; simmer, uncovered, 5 minutes.
  • Add tomatoes and cook another 15 minutes, uncovered.
  • Reduce heat, cover and simmer 20 minutes.
  • Meanwhile, prepare fettucini according to package instructions until tender.
  • Drain well, coat with sauce, sprinkle with Parmesan cheese and serve.
