Gourmet Rotini

  • 1/2 cup [125 mL] onion, finely chopped
  • 1/2 cup [125 mL] celery, finely chopped
  • 1/2 cup [125 mL] carrots, finely chopped
  • 4 tablespoons [60 mL] vegetable oil
  • 1 1/2 pounds [680 g] ground beef
  • 1/2 teaspoon [2.5 mL] salt
  • 1/4 teaspoon [1 mL] pepper
  • 14 ounces [398 mL] tomato spaghetti sauce
  • 16 ounces [454 g] rotini
  • 1/2 cup [125 mL] Parmesan or Mozzarella cheese, shredded
  • In a large frying pan, sauter onions, celery and carrot in vegetable oil.
  • Add ground beef, salt and pepper.
  • Cook, stirring often, until meat is golden.
  • Add spaghetti sauce, cover and simmer for 15 minutes.
  • Cook rotini according to package instructions.
  • Drain.
  • Mix together rotini and meat sauce, and place in a large serving dish.
  • Sprinkle with shredded cheese.
