The color of vegetable pasta is a pastel version of the original vegetable color.
Smoked salmon pasta has a salmon color and delicate flavor.
A simple way to serve it is to toss it with butter and served it sprinkled with smoked salmon dices, topped with a little sour cream then with chopped chives.

Basic Egg Pasta Dough
  • 2 1/4 cups [315 g] all-purpose flour
  • 3 eggs
  • 3/4 teaspoon [3.75 mL] salt
  • 1 tablespoon [15 mL] olive oil
  • 1 tablespoon [15 mL] lukewarm water
Spinach Pasta Dough [Pasta Verde]
  • 8 ounces [227 g] fresh spinach, stems removed
  • 2 eggs
Lemon Pasta Dough
  • 2 eggs
  • 1 egg yolk
  • 2 tablespoons [30 mL] lemon juice
  • 3 tablespoons [45 mL] finely grated lemon rind
Tomato Pasta Dough
  • 2 eggs
  • 1/3 cup [80 mL] tomato paste
  • More flour, if needed
Smoked Salmon Pasta Dough
  • 2 eggs
  • 4 ounces [113 g] finely chopped smoked salmon
Basic Egg Pasta Dough
  • Transfer flour onto a large floured surface.
  • Make a well in the center; break in eggs.
  • Add salt, olive oil and water.
  • Beat mixture in the well with a fork.
  • Using a fork, gently start to work the flour into the liquid.
  • Continue until dough becomes sticky and difficult to work with the fork.
  • Use your hands to shape rough dough into a ball.
  • Leave dough to rest for 10 minutes.
  • Knead dough until smooth and elastic, for approximately 10 minutes.
  • Divide dough into 3 or 4 balls; leave to rest for 30 minutes.
  • Roll out dough, 1 ball at a time to the desired thickness, 1/8 to 1/16 inch [3 to 1.5 mm]; cut into desired shapes.
Spinach Pasta Dough [Pasta Verde]
  • Follow basic egg pasta dough recipe using only 2 eggs.
  • Boil spinach leaves into boiling water for approximately 2 minutes, until wilted.
  • Drain, rinse under cold water, drain and squeeze dry.
  • Puree spinach leaves into a blender.
  • Following basic egg pasta dough recipe using only 2 eggs, add eggs to spinach puree mixture and well blend mixture.
  • Add remaining ingredients.
  • Proceed as directed for basic egg pasta dough.
Lemon Pasta Dough
  • Follow basic egg pasta dough recipe using only 2 eggs and egg yolk.
  • Add lemon juice and finely grated lemon rind.
  • Add remaining ingredients.
  • Proceed as directed for basic egg pasta dough.
Tomato Pasta Dough
  • Follow basic egg pasta dough recipe using only 2 eggs and egg yolk.
  • Blend tomato paste with eggs until well combined.
  • Add remaining ingredients.
  • Proceed as directed for basic egg pasta dough, adding more flour if needed as this dough tends to be sticky.
Smoked Salmon Pasta Dough
  • Follow basic egg pasta dough recipe using only 2 eggs; omit salt.
  • Combine chopped smoked salmon with eggs.
  • Add remaining ingredients.
  • Proceed as directed for basic egg pasta dough.
