Leek Pizza

  • Melted butter
  • 2 leeks
  • 1/2 pack dry cream of leek soup mix
  • 1 cup [250 mL] water
  • 1 [12-inch / 30-cm] unbaked pizza crust
  • Tomato slices
  • Fresh spinach leaves, shredded
  • Ripe or green olives, cut into pieces
  • Grated cheese, to taste
  • Brown finely cut leeks into melted butter; reserve.
  • Into a saucepan, mix together water and dry cream of leek soup mix; heat over low heat.
  • Thoroughly mix in browned leeks; simmer until thickened.
  • Spread mixture over pizza crust.
  • Garnish with tomato slices, shredded spinach leaves and ripe or green olive pieces.
  • Sprinkle with grated cheese.
  • Bake into a preheated 400°F [200°C] oven until cheese is light golden brown.
