- 2 tablespoons [30 mL] oil
- 1 onion, finely chopped
- 1/2 green pepper, chopped
- 2 garlic cloves, finely chopped
- 1 [28-ounce / 796-mL] can tomatoes, chopped
- 6 tablespoons [90 mL] tomato paste
- 2 tablespoons [30 mL] mixed Italian fine herbs
- Crushed chiles
- Tabasco sauce
- Worcestershire sauce
- Salt and pepper
- Pinch of sugar

- Into a large casserole, brown chopped onion, green pepper and garlic into hot oil.
- Add chopped tomatoes, tomato paste and mixed Italian fine herbs.
- Stir well.
- Season to taste with crushed chiles, Tabasco and Worcestershire sauces, salt and pepper.
- Well stir in sugar.
- Simmer over low heat, uncovered, for 1 hour, until quite thick.
- Cool.
