- 1 [4-pound / 1.8-kg] roasting chicken
- 1 [4-ounce / 113-g] package chicken flavoured stuffing mix
- 1 orange, chopped
- 1/2 cup [125 mL] orange juice
- 1/2 cup [125 mL] freshly chopped cranberries
- 1 tablespoon [15 mL] grated orange rind

- Preheat oven 400°F [200°C].
- Rinse chicken; trim off excess fat and remove skin.
- Prepare stuffing according to directions on package, using only 1/2 cup [125 mL] water.
- Mix in orange juice, chopped cranberries and orange rind; bring to a boil.
- Evenly spread stuffing under chicken skin.
- Transfer stuffed chicken onto the wire rack of a roasting pan.
- Roast chicken, loosely covered with foil into preheated oven, for 1 1/2 hours or until done.
