Apple, Chicken Patties

  • 1 1/2 pounds [680 g] skinned and boned chicken breasts
  • White part of 3 bread slices, crumbled
  • Finely grated rind of 1 lemon
  • 1/2 small apple, peeled and finely chopped
  • 2 tablespons [30 mL] freshly chopped mint
  • Salt and pepper
  • 3 ounces [85 g] Cheddar, Blue or Feta cheese, cubed
  • 1 egg, slightly beaten
  • Oil, for frying
  • Cut chicken whites into tiny bites; mix together chicken bites, breadcrumbs, grated lemon rind, chopped aple and mint.
  • Salt and pepper, to taste.
  • Mix in cheese cubes; thoroughly mix in beaten egg.
  • With your hands, shape mixture into 4 patties.
  • Wrap and refrigerate patties for 20 minutes.
  • Pour 1/2 inch [1.3 cm] oil into a heavy-bottom frypan; heat over medium heat.
  • Brown patties for 10 to 15 minutes on each side.
  • Serve.
