- 1 1/2 pounds [680 g] skinned and boned chicken breasts
- White part of 3 bread slices, crumbled
- Finely grated rind of 1 lemon
- 1/2 small apple, peeled and finely chopped
- 2 tablespons [30 mL] freshly chopped mint
- Salt and pepper
- 3 ounces [85 g] Cheddar, Blue or Feta cheese, cubed
- 1 egg, slightly beaten
- Oil, for frying

- Cut chicken whites into tiny bites; mix together chicken bites, breadcrumbs, grated lemon rind, chopped aple and mint.
- Salt and pepper, to taste.
- Mix in cheese cubes; thoroughly mix in beaten egg.
- With your hands, shape mixture into 4 patties.
- Wrap and refrigerate patties for 20 minutes.
- Pour 1/2 inch [1.3 cm] oil into a heavy-bottom frypan; heat over medium heat.
- Brown patties for 10 to 15 minutes on each side.
- Serve.
