Chicken Divan

  • 1 broccoli, broken-up into flowerets, boiled and drained
  • 2 cups [500 mL] cubed chicken meat
  • Butter
  • Oil
  • 1 [10-ounce / 284-mL] can cream of chicken soup concentrate
  • 1/4 to 1/2 cup [60 to 125 mL] mayonnaise
  • 1/3 cup [80 mL] milk
  • 1 teaspoon [5 mL] lemon juice
  • 1 cup [250 mL] freshly grated Mozzarella cheese
  • 2 or 3 bread slices, diced and seasoned or seasoned turkey stuffing
  • 2 tablespoons [30 mL] melted butter
  • 3/4 cup [190 mL] hot water
  • Paprika
  • Chopped parsley
  • Arrange broccoli flowerettes into a square 9-inch [23-cm] or rectangular 8 x 11-inch [20 x 28-cm] oven-proof dish.
  • Fry chicken cubes into a little butter and oil.
  • Arrange fried chicken cubes over broccoli flowerets.
  • Mix together cream of chicken soup concentrate, mayonnaise, milk and lemon juice.
  • Spread mixture over chicken cubes and broccoli flowerettes.
  • Sprinkle with grated Mozzarella cheese.
  • Mix together bread dices or seasoned turkey stuffing, melted butter and hot water; mix well.
  • Spread bread dices mixture over Mozzarella cheese.
  • Sprinkle to taste with paprika and chopped parsley.
  • Bake, uncovered, into a preheated 350°F [180°C] oven, for 25 minutes.
