Cheesy Chicken Patties

  • 3 bacon slices, finely chopped
  • 1 tablespoon [15 mL] butter
  • 1 onion, finely chopped
  • 1/3 cup [80 mL] flour
  • 1 cup [250 mL] milk
  • 1 teaspoon [5 mL] curry powder
  • 1 1/2 cups [375 mL] very finely minced cooked chicken
  • 1 cup [250 mL] grated Old Cheddar cheese
  • Salt and pepper, to taste
  • 2 eggs, slightly beaten
  • 1 cup [250 mL] breadcrumbs
  • Vegetable oil
  • Brown chopped bacon; add butter and brown chopped onion; mix in flour, milk and curry powder.
  • Mix in cooked minced chicken and grated cheese; salt and pepper.
  • Refrigerate mixture for approximately 1 hour; shape into patties.
  • Dip each patty into beaten eggs, then into breadcrumbs.
  • Brown patties, on both sides, into hot vegetable oil; drain onto paper toweling.
  • Serve.
