Apple-Orange Chicken Breast

  • 3 unpeeled cored tart apples, cubed
  • 2 chicken breasts, skinned
  • 2 tablespoons [30 mL] orange juice
  • 2 tablespoons [30 mL] honey
  • 2 orange slices
  • Preheat oven to 350°F [180°C].
  • Arrange apple cubes on the bottom of lightly oiled casserole dish.
  • Transfer skinned chicken breasts over apples.
  • Into a cup, combine orange juice and honey.
  • Spoon 1 tablespoon [15 mL] of mixture over each piece.
  • Cover casserole and bake into preheated oven, for 45 minutes.
  • Uncover casserole.
  • Spoon remaining orange juice and honey mixture over chicken breasts.
  • Bake for 30 minutes more, uncovered.
  • Serve, garnished with orange slices.
