- 3 cups [750 mL] purple plums, pitted and coarslely chopped
[about 1 pound / 454 g]
- 1/3 cup [75 g] sugar
- 1/3 cup [80 mL] water
- 2 tablespoons [30 mL] lemon juice
- 2 tablespoons [30 mL] liquid honey

- Into a heavy medium-size casserole, combine chopped plums, sugar, water and lemon juice.
- Bring to a boil over medium-high heat.
- Lower heat to medium.
- Boil, stirring and mashing occasionnally with back of a spoon, for 15 minutes or until thickened.
- Remove from heat.
- Stir in honey.
- Leave to cool to room temperature.
- Refrigerate into tightly covered jars, for up to 2 weeks.
