Honey Plum Jam

  • 3 cups [750 mL] purple plums, pitted and coarslely chopped
    [about 1 pound / 454 g]
  • 1/3 cup [75 g] sugar
  • 1/3 cup [80 mL] water
  • 2 tablespoons [30 mL] lemon juice
  • 2 tablespoons [30 mL] liquid honey
  • Into a heavy medium-size casserole, combine chopped plums, sugar, water and lemon juice.
  • Bring to a boil over medium-high heat.
  • Lower heat to medium.
  • Boil, stirring and mashing occasionnally with back of a spoon, for 15 minutes or until thickened.
  • Remove from heat.
  • Stir in honey.
  • Leave to cool to room temperature.
  • Refrigerate into tightly covered jars, for up to 2 weeks.
