Homemade Relish

  • 20 cucumbers
  • 8 to 10 onions [10 medium-size onions]
  • 1/2 sweet red pepper [for its colour]
  • 1/2 cup [125 mL] pickling salt
  • 5 cups [1 kg] sugar
  • 5 cups [1.25 L] vinegar
  • 1 teaspoon [5 mL] turmeric
  • 1 teaspoon [5 mL] ground clove
  • Sterilized jars
  • Brush, slice and seed cucumbers.
  • Mince cucumbers, along with onions and sweet red pepper.
  • Sprinkle minced vegetables with pickling salt,
  • Leave to soak for 4 hours.
  • Drain slowly for 1 hour.
  • Mix in sugar, vinegar, turmeric and ground clove.
  • Bring to a boil over high heat; boil for 20 minutes.
  • Pour into sterilized jars; seal.
