- 3 cups [750 mL] young cedar shoots
- Juice from 2 lemons
- 2 cups [500 mL] boiling water
- 3 1/2 cups [875 mL] sugar
- Food coloring [optional]
- 1/2 bottle liquid pectin

- Chop cedar shoots together with lemon juice into a food processor or mince cedar shoots very finely using a knife.
- Add processed or minced cedar shoots and lemon juice to boiling water; boil for approximately 15 minutes.
- Strain [you should get 2 cups / 500 mL liquid].
- Stir in sugar, and if desired, food coloring to taste.
- Boil, stirring for 10 minutes.
- Pour in liquid pectin; boil for 1 minute more.
- Away from heat, skim off the foam; then pour into sterilized jars.
- Seal immediately; cool.
