Cedar Jelly

Servings: 3 [6-ounce / 170-mL each] jars
  • 3 cups [750 mL] young cedar shoots
  • Juice from 2 lemons
  • 2 cups [500 mL] boiling water
  • 3 1/2 cups [875 mL] sugar
  • Food coloring [optional]
  • 1/2 bottle liquid pectin
  • Sterilized jars
  • Chop cedar shoots together with lemon juice into a food processor or mince cedar shoots very finely using a knife.
  • Add processed or minced cedar shoots and lemon juice to boiling water; boil for approximately 15 minutes.
  • Strain [you should get 2 cups / 500 mL liquid].
  • Stir in sugar, and if desired, food coloring to taste.
  • Boil, stirring for 10 minutes.
  • Pour in liquid pectin; boil for 1 minute more.
  • Away from heat, skim off the foam; then pour into sterilized jars.
  • Seal immediately; cool.
