- 2 tablespoons [30 mL] pickling spices
- 1/2 teaspoon [2.5 mL] peppercorns
- 2 pounds [1 kg] tomatoes
- 2 pounds [1 kg] unpeeled apples
- 1 green pepper, membranes removed and seeded
- 3 celery stalks
- 4 medium-size onions, peeled
- 1 cup [200 g] sugar
- 2 1/2 cups [625 mL] vinegar
- 1 tablespoon [15 mL] salt
- 6 [16-ounce / 500-mL] sterilized jars

- Tie and secure pickling spices and peppercorns into cottoncheese cloth.
- Into a food processor, chop together tomatoes, apples, green pepper, celery stalks and onions.
- Pour into a large enough casserole; add sugar, vinegar, salt and marinade spices/peppercorns 'bag'.
- Simmer over medium heat, uncovered, for 1 hour, until thickened, stirring often.
- Throw away marinade spices/peppercorns 'bag'.
- Pour into sterilized jars; seal.
