  • 2 tablespoons [30 mL] pickling spices
  • 1/2 teaspoon [2.5 mL] peppercorns
  • 2 pounds [1 kg] tomatoes
  • 2 pounds [1 kg] unpeeled apples
  • 1 green pepper, membranes removed and seeded
  • 3 celery stalks
  • 4 medium-size onions, peeled
  • 1 cup [200 g] sugar
  • 2 1/2 cups [625 mL] vinegar
  • 1 tablespoon [15 mL] salt
  • 6 [16-ounce / 500-mL] sterilized jars
  • Tie and secure pickling spices and peppercorns into cottoncheese cloth.
  • Into a food processor, chop together tomatoes, apples, green pepper, celery stalks and onions.
  • Pour into a large enough casserole; add sugar, vinegar, salt and marinade spices/peppercorns 'bag'.
  • Simmer over medium heat, uncovered, for 1 hour, until thickened, stirring often.
  • Throw away marinade spices/peppercorns 'bag'.
  • Pour into sterilized jars; seal.
