- 1 pound [454 g] freshly chopped tomatoes [3 or 4]
- 2 tablespoons [30 mL] tomato paste
- 3 tablespoons [45 mL] wine vinegar
- 2 teaspoons [10 g] sugar
- 1 small onion, chopped
- 2 garlic cloves, crushed

- Bring all ingredients to a boil.
- Simmer for 15 to 20 minutes.
- Spoon into hot, sterilized jars leaving 1/8-inch [3-mm] headspace.
- Seal.
