- 4 cups [1 L] cucumber dices*
- 2 cups [500 mL] water
- 2 cups [500 mL] sugar
- Juice of 1/2 a lemon or
Rind of 1 orange or 1 lemon

- *Cut peeled, seeded cucumbers into small dices.
- Transfer cucumber dices into a cloth, into a colander; leave to dry for at least 1 day.
- Boil together water and sugar to get a thick syrup, for approximately 15 minutes.
- Add cucumber dices; simmer until translucent.
- Season with lemon juice or with orange or lemon rind.
- Cool; pour into sterilized jars.
