Cucumber Jam

  • 4 cups [1 L] cucumber dices*
  • 2 cups [500 mL] water
  • 2 cups [500 mL] sugar
  • Juice of 1/2 a lemon or
    Rind of 1 orange or 1 lemon
  • Sterilized jars
  • *Cut peeled, seeded cucumbers into small dices.
  • Transfer cucumber dices into a cloth, into a colander; leave to dry for at least 1 day.
  • Boil together water and sugar to get a thick syrup, for approximately 15 minutes.
  • Add cucumber dices; simmer until translucent.
  • Season with lemon juice or with orange or lemon rind.
  • Cool; pour into sterilized jars.
