- 2 pounds [1 kg] green tomatoes, cut into large pieces [approximately 5 to 6 cups / 1.25 to 1.5 L]
- 1 green pepper, chopped
- 1 sweet red pepper, chopped
- 3 medium-size onions, chopped
- 2 cups [500 mL] white vinegar
- 2 1/2 cups [625 mL] firmly packed brown sugar
- 1 tablespoon [15 mL] pickling salt
- 1 tablespoon [15 mL] mustard seeds
- 2 teaspoons [10 mL] celery seeds
- 1/2 teaspoon [2.5 mL] curcuma
- 1/8 teaspoon [0.5 mL] Cayenne pepper
- 6 or 7 large apples, peeled and cut into large pieces
- 1 cup [250 mL] raisins

- Into a large casserole, mix together green tomato pieces, chopped green pepper, sweet red pepper and onions, white vinegar, brown sugar, pickling salt, mustard seeds, celery seeds, curcuma and Cayenne pepper.
- Simmer, uncovered, for 30 minutes.
- Add apple pieces and raisins; simmer for 20 minutes or until thick.
- Pour mixture into hot sterilized jars, leaving 1/8 inch [3 mm] free space on top.
- Seal immediately.
