Light Uncooked Strawberry Jam

| Ingredients | Preparation |
- 4 cups [1 L] lightly crushed strawberries
- 1/2 cup [125 mL] splenda
- 1 pack pectin
- 1 teaspoon [5 mL] grated lemon rind
|
- Transfer crushed strawberries, splenda, pectin and grated lemon rind into a bowl.
- Stir delicately, leaving strawberries whole; leave to rest for 5 minutes.
- Stir delicately once more.
- Refrigerate.
