Cranberry Jelly

  • 1 cup [250 mL] water
  • 4 cups [1 L] fresh cranberries
  • 1 3/4 cups [440 mL] sugar
  • Melted paraffin
  • Bring water to a boil; add cranberries.
  • Cover casserole; cook over low heat until cranberries burst, for 15 to 20 minutes.
  • Mix in sugar; cook for 5 to 10 minutes more, without stirring.
  • Pour into stoneware or glass jars.
  • Leave to cool before delicately pouring in some melted paraffin on top; seal jars.
