Onion Marmalade

Comments: Excellent along with counry-style pate.
  • 1 tablespoon [15 mL] vegetable oil
  • 1/2 cup [125 mL] minced onion
  • 3/4 cup [190 mL] red wine
  • 2 tablespoons [30 mL] red wine vinegar
  • 3 tablespoons [45 mL] sugar
  • 1 tablespoon [15 mL] currant jelly
  • Heat oil; melt in minced onion.
  • Deglaze pan with red wine and red wine vinegar.
  • Add sugar and currant jelly.
  • Boil until there is no liquid left.
  • Cool.
