Indian-Style Chutney

  • 2 large unpeeled apples, seeded and chopped
  • 4 medium-size onions, chopped
  • 3 cups [750 mL] chopped dates
  • 1 teaspoon [5 mL] Cayenne pepper
  • 1 teaspoon [5 mL] ginger
  • 1 teaspoon [5 mL] dry mustard
  • 5 cups [1.25 L] white vinegar
  • 1 teaspoon [5 mL] salt
  • 2 1/2 cups [625 mL] firmly packed brown sugar
  • Sterilized jars
  • Mix together chopped apples, onions and dates, Cayenne pepper, ginger, dry mustard and vinegar.
  • Simmer, uncovered, for 1 hour.
  • Towards the end, mix in salt and brown sugar; simmer until brown sugar is completely dissolved.
  • Pour into sterilized jars; seal.
  • Sterilize for 10 minutes, into hot boiling water.
