- 2 large unpeeled apples, seeded and chopped
- 4 medium-size onions, chopped
- 3 cups [750 mL] chopped dates
- 1 teaspoon [5 mL] Cayenne pepper
- 1 teaspoon [5 mL] ginger
- 1 teaspoon [5 mL] dry mustard
- 5 cups [1.25 L] white vinegar
- 1 teaspoon [5 mL] salt
- 2 1/2 cups [625 mL] firmly packed brown sugar

- Mix together chopped apples, onions and dates, Cayenne pepper, ginger, dry mustard and vinegar.
- Simmer, uncovered, for 1 hour.
- Towards the end, mix in salt and brown sugar; simmer until brown sugar is completely dissolved.
- Pour into sterilized jars; seal.
- Sterilize for 10 minutes, into hot boiling water.
