- 1 pound [454 g] dark red rose petals
- Cold water
- Juice of 1 lemon
- 1 2/3 pounds [750 g] sugar
- 1/2 cup [125 mL] water
- Juice of 3 lemons
- Melted paraffin [optional]

- Remove enough petals from roses to get 1 pound [454 g]; cover petals wiht cold water.
- Mix in juice of 1 lemon.
- Macerate until water starts to color.
- Remove petals from water; drain petals.
- Prepare a syrup, mixing together sugar and 1/2 cup [125 mL] water; boil for 5 minutes.
- Add petals to boiling water mixture.
- Boil for 20 minutes.
- Mix in remaining lemon juice [of 3 lemons]; boil for 5 minutes, and then take away from heat.
- Leave to rest for 15 minutes before pouring mixture into sterilized jars.
- If possible, top with melted paraffin before sealing jars.
