Dark Rose Petal Jam

Comments: Only use dark red roses, such as 'France' variety.

  • 1 pound [454 g] dark red rose petals
  • Cold water
  • Juice of 1 lemon
  • 1 2/3 pounds [750 g] sugar
  • 1/2 cup [125 mL] water
  • Juice of 3 lemons
  • Melted paraffin [optional]
  • Remove enough petals from roses to get 1 pound [454 g]; cover petals wiht cold water.
  • Mix in juice of 1 lemon.
  • Macerate until water starts to color.
  • Remove petals from water; drain petals.
  • Prepare a syrup, mixing together sugar and 1/2 cup [125 mL] water; boil for 5 minutes.
  • Add petals to boiling water mixture.
  • Boil for 20 minutes.
  • Mix in remaining lemon juice [of 3 lemons]; boil for 5 minutes, and then take away from heat.
  • Leave to rest for 15 minutes before pouring mixture into sterilized jars.
  • If possible, top with melted paraffin before sealing jars.
