Lilac White Wine Jelly

IngredientsPreparation
  • 1 1/2 cups [375 mL] water
  • 1 1/2 cups [375 mL] white wine
  • 4 1/2 cups [900 g] sugar
  • 3 cups [750 mL] lilac petals
  • 1/3 cup + 2 teaspoons [90 mL] pectin
  • Hot sterilized jars
  • Into a large casserole, bring water, white wine and sugar to a boil.
  • Add lilac petals; simmer for 15 minutes.
  • Take away from heat.
  • Using a skimming ladle, remove almost all petals.
  • Thoroughly mix in pectin.
  • Bring back to a boil.
  • Boil for a few seconds; take away from heat.
  • Mix well.
  • Just cool jelly; ladle into hot, sterilized jars.
  • Seal jars.
