Louisiana-Style Fig Chutney [Louisiana, USA]
Comments: Day-old, over-ripe figs may be used for this chutney.
Can be frozen.
Servings: 2 cups [500 mL]

  • 4 cups [1 L] whole fresh figs, rinsed
  • 1/3 cup [75 g] sugar
  • 1/3 cup [80 mL] water
  • 1/4 teaspoon [1 mL] ground ginger
  • 1/4 teaspoon [1 mL] allspice
  • 1/4 teaspoon [1 mL] cinnamon
  • 1/4 teaspoon [1 mL] ground clove
  • 1 lemon, peeled, seeded and cut into small pieces
  • Into a large casserole, mix together figs, sugar, water, ground ginger, allspice, cinnamon, ground clove and lemon pieces.
  • Stirring often, bring to a boil over medium heat.
  • Lower heat; allow to cook for 5 minutes, until syrup becomes thick brown.
  • Leave to cool and pour into small containers.
  • Refrigerate until cold before serving.
