Cucumbers with Fennel

  • 9 cups [2.25 L] water
  • 4 cups [1 L] vinegar
  • 1 cup [250 mL] pickling salt
  • Small cucumbers
  • Fennel sticks [3 per jar]
  • Garlic cloves [1 per jar]
  • Bay leaves [2 per jar]
  • Boil together water, vinegar and pickling salt for 5 minutes.
  • Fill jars with whole or cut lengthwise cucumbers.
  • Add fennel sticks, garlic cloves and bay leaves to each jar.
  • Pour hot vinegar mixture into jars; seal.
  • Leave to marinate for at least 1 week before eating.
