Green and Red Bell Pepper Relish

  • 12 sweet green peppers
  • 12 sweet red peppers
  • 3 onions
  • Boiling water
  • 2 cups [400 g] sugar
  • 1 tablespoon [15 mL] salt
  • White vinegar
  • Hot sterilized jars
  • Seed and remove membranes from bell peppers; peel onions.
  • Grind bell peppers and onions into a meat grinder.
  • Cover mixture with boiling water; set aside for 10 minutes.
  • Drain well; transfer into a saucepan.
  • Sprinkle with sugar and salt; completely cover with vinegar.
  • Simmer for 20 minutes; pour into hot sterilized jars and seal.
