Maple Pear-Lemon Marmalade
From:
  • Rind and juice of 2 lemons
  • 3 cups [750 mL] cored and peeled pear dices
  • 1 cup [250 mL] maple syrup
    or
    3/4 cup [190 mL] grated maple sugar
  • 1/2 teaspoon [2.5 mL] nutmeg
  • 1 split vanilla bean
  • Water
  • Still hot sterilized jars [optional]
  • Transfer lemon rind into a medium casserole; cover rind with water.
  • Bring to a boil then strain lemon rind throwing away cooking water; repeat twice.
  • Into the same casserole, add lemon juice to lemon rind along with pear dices, maple syrup or grated maple sugar, nutmeg and split vanilla bean.
  • Mix, bring to a boil then cook mixture over medium heat for approximately 20 minutes, until thickened.
  • Scum using a spoon whenever necessary.
  • Pour boiling mixtrue into hot sterilized jars and seal jars, or keep mixture refrigerated if using soon.
