- 24 tomatoes
- 5 peaches
- 5 pears, cored then diced
- 4 apples, peeled cored then cut into small dices
- 4 onions, chopped
- 3 sweet green peppers, membranes removed and seeded, into small dices
- 2 cups [500 mL] small celery dices
- 5 cups [1.25 L] vinegar
- 4 cups [1 L] maple syrup
- 1/4 cup [60 mL] pickling salt
- 2 tablespoons [30 mL] marinade spices
- 7 [16-ounce / 500-mL each] still hot sterilized jars

- Completely cover tomatoes ans peaches with boiling water; peel tomatoes then peel and stone peaches.
- Ccut tomatoes and peaches into small dices.
- Transfer tomato, peach, pear and apple dices, chopped onion, sweet green pepper dices and celery dices into a large casserole.
- Pour in vinegar and maple syrup then add pickling salt.
- Bring to a boil, lower heat then leave mixture to simmer uncovered stirring often until of desired consistency, for approximately 2 hours.
- Add marinade spices and leave to simmer for 15 minutes more.
- Pour boiling mixture into hot sterilized jars sealing filled jars immediately.
