Maple Syrup Fruit Catsup

  • 24 tomatoes
  • 5 peaches
  • 5 pears, cored then diced
  • 4 apples, peeled cored then cut into small dices
  • 4 onions, chopped
  • 3 sweet green peppers, membranes removed and seeded, into small dices
  • 2 cups [500 mL] small celery dices
  • 5 cups [1.25 L] vinegar
  • 4 cups [1 L] maple syrup
  • 1/4 cup [60 mL] pickling salt
  • 2 tablespoons [30 mL] marinade spices
  • 7 [16-ounce / 500-mL each] still hot sterilized jars
  • Completely cover tomatoes ans peaches with boiling water; peel tomatoes then peel and stone peaches.
  • Ccut tomatoes and peaches into small dices.
  • Transfer tomato, peach, pear and apple dices, chopped onion, sweet green pepper dices and celery dices into a large casserole.
  • Pour in vinegar and maple syrup then add pickling salt.
  • Bring to a boil, lower heat then leave mixture to simmer uncovered stirring often until of desired consistency, for approximately 2 hours.
  • Add marinade spices and leave to simmer for 15 minutes more.
  • Pour boiling mixture into hot sterilized jars sealing filled jars immediately.
