Maple Syrup Green Tomato Catsup
Servings: 12 [1-cup / 250-mL each] jars
  • 12 green tomatoes, sliced [4 pounds / 1.8 kg]
  • 2 tablespoons [30 mL] pickling salt
  • 4 large tart apples, diced
  • 5 cups [1.25 L] celery slices
  • 3 large onions, minced
  • 4 cups [1 L] maple syrup
  • 2 1/2 cups [625 mL] vinegar
  • 1 1/2 tablespoons [22.5 mL] marinade spices
  • 1 tablespoon [15 mL] pickling salt
  • 12 [1-cup / 250-mL each] hot sterilized jars
  • Arrange green tomato slices into a large bowl.
  • Sprinkle slices with 2 tablespoons [30 mL] pickling salt.
  • Leave to rest overnight.
  • Drain green tomato slices; transfer slices into a large casserole, along with all remaining ingredients.
  • Simmer over low heat for 2 to 3 hours, until thickened.
  • Pour hot catsup into hot sterilized jars.
  • Seal immediately.
