- 8 cups [2 L] water
- 4 cups [1 L] vinegar
- 1 tablespoon [15 g] sugar
- 1 tablespoon [15 mL] salt
- 1 heaping tablespoon [15 mL] pickling spices
- Any color sweet peppers
- Fresh dill sprigs
- Hot sterilized jars and lids

- Bring together water, vinegar, sugar, salt and pickling spices to a boil.
- Leave to simmer for 30 minutes.
- Slice or cut sweet peppers into wedges removing membranes and seeds.
- Pack sterilized jars with sweet pepper slices or wedges and a sprig of fresh dill.
- Fill jars 1/2 inch [1.3 cm] from top with boiling vinegar mixture.
- Seal jars.
