Blender Spicy Apple Jam
Servings: About 8 3/4 cups [2.19 L]

  • 5 cups [1.25 L]* clean fully ripe apple pieces [about 3 pounds / 1.4 kg]
  • 7 1/2 cups [1.5 kg] sugar
  • 1 teaspoon [5 mL] ground allspice
  • 1 1/2 teaspoons [7.5 mL] ground cinnamon
  • 1/4 cup [60 mL] lemon juice
  • 1 pouch dry pectin
  • Water
  • Hot sterilized jars, rings and covers
  • Peel, core and cut each fully ripe apples into 8 wedges.
  • Transfer 1/4th of apple pieces into the container of an electric blender.
  • Pour in 1/2 cup [125 mL] water.
  • Blend at high speed for about 15 seconds.
  • Repeat with remaining apple pieces pouring in 1/2 cup [125 mL] water at each time.
  • *Measure 5 cups [1.25 L] of this mixture into a very large saucepan.
  • Add sugar, allspice, cinnamon and lemon juice.
  • Over high heat, bring mixture to a full rolling boil.
  • Boil hard for 1 minute, stirring.
  • Remove from heat and stir in dry pectin all at once.
  • Skim then ladle into hot sterilized jars, leaving a 1/8-inch [3-mm] head space.
  • Process for 5 minutes into boiling water bath.
