- 5 cups [1.25 L]* clean fully ripe apple pieces [about 3 pounds / 1.4 kg]
- 7 1/2 cups [1.5 kg] sugar
- 1 teaspoon [5 mL] ground allspice
- 1 1/2 teaspoons [7.5 mL] ground cinnamon
- 1/4 cup [60 mL] lemon juice
- 1 pouch dry pectin
- Water
- Hot sterilized jars, rings and covers

- Peel, core and cut each fully ripe apples into 8 wedges.
- Transfer 1/4th of apple pieces into the container of an electric blender.
- Pour in 1/2 cup [125 mL] water.
- Blend at high speed for about 15 seconds.
- Repeat with remaining apple pieces pouring in 1/2 cup [125 mL] water at each time.
- *Measure 5 cups [1.25 L] of this mixture into a very large saucepan.
- Add sugar, allspice, cinnamon and lemon juice.
- Over high heat, bring mixture to a full rolling boil.
- Boil hard for 1 minute, stirring.
- Remove from heat and stir in dry pectin all at once.
- Skim then ladle into hot sterilized jars, leaving a 1/8-inch [3-mm] head space.
- Process for 5 minutes into boiling water bath.
