- 1 [9-inch / 23-cm] pie shell
- 4 ounces [113 g] Gruyere cheese, cut into fine strips
- 6 ounces [170 g] lean bacon slices, fried until crisp then crumbled
- 5/8 cup [150 mL] light cream
- 3 eggs
- 1/2 teaspoon [2.5 mL] salt
- 1/2 teaspoon [2.5 mL] white pepper

- Preheat oven to 400°F [200°C].
- Transfer pie shell in its plate onto a baking sheet.
- Fill pie shell with fine Gruyere cheese strips; sprinkle with bacon crumbs.
- Set aside.
- Into a medium-size bowl, well beat together cream, eggs, salt and white pepper.
- Evenly pour mixture into pie shell.
- Bake in the centre of preheated oven for approximately 25 to 30 minutes, until set, firm and golden brown.
- Serve.
