Gruyere Cheese Quiche Lorraine

  • 1 [9-inch / 23-cm] pie shell
  • 4 ounces [113 g] Gruyere cheese, cut into fine strips
  • 6 ounces [170 g] lean bacon slices, fried until crisp then crumbled
  • 5/8 cup [150 mL] light cream
  • 3 eggs
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 teaspoon [2.5 mL] white pepper
  • Preheat oven to 400°F [200°C].
  • Transfer pie shell in its plate onto a baking sheet.
  • Fill pie shell with fine Gruyere cheese strips; sprinkle with bacon crumbs.
  • Set aside.
  • Into a medium-size bowl, well beat together cream, eggs, salt and white pepper.
  • Evenly pour mixture into pie shell.
  • Bake in the centre of preheated oven for approximately 25 to 30 minutes, until set, firm and golden brown.
  • Serve.
