Seafood Quiche

Comments: I tried different seafood quiche before discovering that mayonnaise is the key ingredient.

  • 1/4 cup [60 mL] chopped green onion
  • 1/4 cup [60 mL] chopped celery
  • Butter
  • 1/2 cup [125 mL] mayonnaise
  • 1 tablespoon [8.75 g] flour
  • 2 eggs
  • 1/4 cup [60 mL] white wine or chicken broth
  • 8 ounces [227 g] crabmeat
  • 8 ounces [227 g] shrimps
  • 8 ounces [227 g] finely chopped Swiss cheese
  • 1 pie shell
  • Into a frypan, brown together chopped green onion and celery into butter, until tender.
  • Slightly cool; drain.
  • Thoroughly mix together mayonnaise, flour, eggs and white wine or chicken broth.
  • Add, stirring delicately, crabmeat, shrimps, finely chopped Swiss cheese and cooled green onion/celery mixture.
  • Pour into pie shell.
  • Bake into a preheated 350°F [180°C] oven, for 35 to 40 minutes.
