- 1 [9-inch / 23-cm] short-crust pastry shell, unbaked
- 1 cup [225 g] grated Cheddar or Mozzarella cheese
- 2 eggs
- 1 egg yolk
- 1 cup [250 mL] cream [35% or 15% m.s.g.]
- Salt and pepper, to taste
- Basil, to taste
- 1 tablespoon [15 mL] oil
- 1/2 cup [125 mL] mushroom slices
- 1/2 cup [125 mL] ham dices
- 2 green onions, minced
- 3/4 cup [190 mL] sweet pepper cubes or olive slices

- Preheat oven to 375°F [190°C].
- Line pastry shell into a pie plate; sprinkle bottom with 3/4 cup [175 g] of the grated cheese.
- Reserve.
- Into a bowl, whip eggs, add cream, salt, pepper and basil; thoroughly mix and reserve.
- Brown together mushroom slices, ham dices, minced green onions and sweet pepper cubes or olive slices into hot oil for 3 minutes, over high heat.
- Take away from heat.
- Pour mixture over grated cheese into pie shell; pour reserved egg mixture all over.
- Sprinkle with remaining grated cheese.
- Bake into preheated oven for approximately 25 minutes, until golden brown.
