Royal Quiche

  • 1 [9-inch / 23-cm] short-crust pastry shell, unbaked
  • 1 cup [225 g] grated Cheddar or Mozzarella cheese
  • 2 eggs
  • 1 egg yolk
  • 1 cup [250 mL] cream [35% or 15% m.s.g.]
  • Salt and pepper, to taste
  • Basil, to taste
  • 1 tablespoon [15 mL] oil
  • 1/2 cup [125 mL] mushroom slices
  • 1/2 cup [125 mL] ham dices
  • 2 green onions, minced
  • 3/4 cup [190 mL] sweet pepper cubes or olive slices
  • Preheat oven to 375°F [190°C].
  • Line pastry shell into a pie plate; sprinkle bottom with 3/4 cup [175 g] of the grated cheese.
  • Reserve.
  • Into a bowl, whip eggs, add cream, salt, pepper and basil; thoroughly mix and reserve.
  • Brown together mushroom slices, ham dices, minced green onions and sweet pepper cubes or olive slices into hot oil for 3 minutes, over high heat.
  • Take away from heat.
  • Pour mixture over grated cheese into pie shell; pour reserved egg mixture all over.
  • Sprinkle with remaining grated cheese.
  • Bake into preheated oven for approximately 25 minutes, until golden brown.
