Italian-Style Three-Cheese Quiche

Peas, asparagus or spinach can be added to this repice.
This quiche can also be baked without the crust.
1 3/4 cups [440 mL] Ricotta cheese
3/4 cup [1175 g] grated Mozzarella cheese
1/4 cup [60 g] grated Parmesan cheese
2/3 cup [160 mL] diced ham
Salt and pepper, to taste
1 unbaked pastry shell
Beat eggs with a fork.
Mix together ricotta cheese, Ricotta cheese, Mozzarella cheese, Parmesan cheese and ham dices.
Pour in eggs, stirring delicately.
Season with salt and pepper.
Pour mixture into pastry shell.
Bake into a 350°F [180°C] oven, for 30 to 40 minutes.
