Zucchini Dijon Mustard Quiche

  • 1 baked, very lightly browned, pastry shell
  • 2 teaspoons [10 mL] Dijon mustard
  • 1 cup [250 mL] chopped onions
  • 4 cups [1 L] grated zucchinis
  • 1/2 cup [115 g] margarine
  • 2 tablespoons [30 mL] freshly chopped parsley
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 teaspoon [2.5 mL] pepper
  • 1/4 teaspoon [1 mL] basil
  • 1/4 teaspoon [1 mL] garlic powder
  • 2 beaten eggs
  • 2 cups [450 g] grated Mozzarella cheese
  • Brush pastry shell with Dijon mustard.
  • Brown together chopped onions and grated zucchinis, into hot margarine.
  • Beat together chopped parsley, salt, pepper, basil, garlic powder, beaten eggs and grated cheese.
  • Pour into pastry shell.
  • Bake into a preheated 350°F [180°C] oven until firm, for approximately 35 minutes.
