- 1 baked, very lightly browned, pastry shell
- 2 teaspoons [10 mL] Dijon mustard
- 1 cup [250 mL] chopped onions
- 4 cups [1 L] grated zucchinis
- 1/2 cup [115 g] margarine
- 2 tablespoons [30 mL] freshly chopped parsley
- 1/2 teaspoon [2.5 mL] salt
- 1/2 teaspoon [2.5 mL] pepper
- 1/4 teaspoon [1 mL] basil
- 1/4 teaspoon [1 mL] garlic powder
- 2 beaten eggs
- 2 cups [450 g] grated Mozzarella cheese

- Brush pastry shell with Dijon mustard.
- Brown together chopped onions and grated zucchinis, into hot margarine.
- Beat together chopped parsley, salt, pepper, basil, garlic powder, beaten eggs and grated cheese.
- Pour into pastry shell.
- Bake into a preheated 350°F [180°C] oven until firm, for approximately 35 minutes.
