Leek, Pollock and Basil Quiche

  • 4 or 5 slices of bread, crusts removed
  • 2 teaspoons [10 mL] oil
  • 1 onion, chopped
  • 1 leek, minced
  • 1 cup [250 mL] chopped pollock [shrimp, lobster or crab flavoured]
  • 3/4 cup [175 g] grated Mozzarella cheese
  • 4 beaten eggs
  • 2 cups [500 mL] milk
  • 1/2 tablespoon [7.5 mL] basil
  • Salt and pepper, to taste
  • Preheat oven to 375°F [190°C].
  • Using a rolling pin, flatten slices of bread; arrange slices over the bottom and up the sides of a buttered 9-inch [23-cm] pie plate.
  • Lightly brown into preheated oven; reserve.
  • Heat oil into a frypan; brown chopped onion and minced leek for 2 to 3 minutes.
  • Evenly spread mixture over browned slices of bread.
  • Top with pollock; sprinkle with grated cheese.
  • Into a clean bowl, beat together beaten eggs, milk, basil, salt and pepper; pour all over grated cheese.
  • Bake into preheated oven for 30 minutes, until a toothpick comes out clean from its center.
