Zucchini Quiche

Preparation
  • 1 [9-inch / 23-cm] half-baked pastry shell
  • Grated Mozzarella cheese
  • 1 zucchini, thinly sliced
  • 3 green onions, sliced
  • 1 tomato, diced [more if desired]
  • 4 eggs
  • Skim milk
  • Salt and pepper, to taste
  • Lightly sprinkle pastry shell with a grated Mozzarella cheese.
  • Top with zucchini slices; add green onion slices and, if desired, tomato dices.
  • Beat together eggs and a little skim milk; pour all over vegetables, into pastry shell.
  • Salt and pepper.
  • Sprinkle with remaining Mozzarella cheese.
  • Bake into a preheated 350°F [180°C] oven, until golden brown.
