- 1 [9-inch / 23-cm] half-baked pastry shell
- Grated Mozzarella cheese
- 1 zucchini, thinly sliced
- 3 green onions, sliced
- 1 tomato, diced [more if desired]
- 4 eggs
- Skim milk
- Salt and pepper, to taste

- Lightly sprinkle pastry shell with a grated Mozzarella cheese.
- Top with zucchini slices; add green onion slices and, if desired, tomato dices.
- Beat together eggs and a little skim milk; pour all over vegetables, into pastry shell.
- Salt and pepper.
- Sprinkle with remaining Mozzarella cheese.
- Bake into a preheated 350°F [180°C] oven, until golden brown.
