Vegetable Quiche

  • 1 cup [250 mL] boiled broccoli flowerets
  • 1 cup [250 mL] boiled cauliflower flowerets
  • 1 or 2 boiled carrots, sliced
  • 1 leek or onion, sliced
  • 1 unbaked pastry shell
  • 2 eggs
  • 3/4 cup [190 mL] heavy cream [35% m.s.g.]
  • Salt and pepper, to taste
  • 1/4 pound [113 g] grated Gruyere cheese
  • Arrange broccoli and cauliflower flowerets, carrot and leek or onion slices into pastry shell.
  • Into a bowl, beat together eggs, heavy cream, salt, pepper and grated Gruyere cheese.
  • Pour over vegetables, into pastry shell.
  • Bake into a preheated 350°F [180°C] oven, for approximately 45 minutes.
