Onion Quiche

Comments: Serve at lunch time or as a lighy dinner, along with a vegetable salad.

  • 3/4 cup [175 g] grated Cheddar cheese
  • 1 tablespoon [8.75 g] flour
  • 1 [9-inch / 23-cm] baked pie shell
  • 1 1/4 cups [310 mL] minced onion
  • 2 tablespoons [30 g] butter or oil [30 mL]
  • 3 beaten eggs
  • 3/4 cup [190 mL] milk
  • Salt and pepper, to taste
  • 2 tablespoons [30 g] grated Cheddar cheese
  • Mix together 3/4 cup [175 g] grated Cheddar cheese and flour.
  • Sprinkle mixture all over the bottom of baked pie shell.
  • Softened minced onion into hot butter or oil.
  • Sprinkle softenend minced onion over cheese/flour mixture.
  • Beat together beaten eggs and milk.
  • Salt and pepper.
  • Pour into pie shell, over onion mixture.
  • Sprinkle with remaining 2 tablespoons [30 g] grated Cheddar cheese.
  • Bake into a preheated 350°F [180°C] oven for 30 minutes, until set.
  • Cool for 5 minutes before serving.
