Coffee Seafood Quiche
Comments: You may want to use 1 1/2 cups [375 mL] mixed tiny pieces vegetables instead of seafood.
Mixtures of chopped sweet green and red peppers and onion, either steamed or just stir-fried, or spinach and cherry-tomatoes are delicious.

Dough
  • 1/2 cup [115 g] butter
  • 1 cup [140 g] all-purpose flour
Filling
  • 1/2 tablespoon [7.5 mL] concentrated coffee [6 tablespoons / 90 mL dark roasted coffee for 6 ounces / 190 mL water]
  • 1/2 cup [125 mL] cream
  • 1 1/2 cups [340 g] grated Swiss cheese
  • 1 1/2 teaspoons [4.4 g] flour
  • 2 eggs, beaten
  • 1/4 teaspoon [1 mL] freshly ground black pepper
  • 1 1/2 cups [375 mL] steamed shelled shrimps or mixed seafood pieces
  • 2 tablespoons [30 mL] drained capers
  • Preheat oven to 400°F [200°C].
  • To prepare dough, into a bowl, finely cut butter into flour.
  • Evenly press mixture over the bottom of a 13 x 9 x 2-inch [33 x 23 x 5-cm] baking dish; reserve.
  • Mix together prepared coffee and cream.
  • Into a large bowl, mix together rated Swiss cheese and flour.
  • Mix in coffee mixture, beaten eggs, freshly ground black pepper, steamed shelled shrimps or mixed seafood pieces and drained capers.
  • Pour mixture into reserved baking dish.
  • Bake quiche into preheated oven for approximately 30 minutes, until golden and swollen.
  • Leave to rest for 10 minutes, before slicing and serving.
