- 2 1/4 cups [315 g] sifted flour
- 1 teaspoon [5 mL] salt
- 3/4 cup [175 g] shortening
- Approximately 5 tablespoons [75 mL] cold milk
- 1 egg white
- 1 cup [225 g] grated Swiss cheese, to sprinkle
Filling
- 1 tablespoon [15 g] butter or margarine
- 1 cup [250 mL] back bacon dices
- 2 cups [500 mL] thin unpeeled cored red delicious apple slices
- 4 eggs
- 1 egg yolk
- 1 tablespoon [8.75 g] flour
- 1 3/4 cups [440 mL] half-and-half
- 1/2 teaspoon [2.5 mL] salt
- 1/8 teaspoon [0.5 mL] nutmeg
- 1/4 teaspoon [1 mL] caraway seeds
- 1/2 teaspoon [2.5 mL] dry mustard

- Arrange one of oven racks one notch under the middle notch; preheat oven to 425°F [220°C].
- Into a bowl, mix together sifted flour and salt.
- Cut in shortening until of size of peas.
- Stir in enough cold milk to get a firm dough.
- Divide dough into 6 equal parts; shape into balls.
- Onto a lightly floured surface, roll each part of dough into a 5-inch [12.7-cm] round; line 6 tart molds with dough.
- Turn a little of excess dough all around underneath; pinch high.
- Using a fork, prick dough all over inside each mold.
- Lightly beat then brush bottom and sides of dough with beaten egg white.
- Bake tarts into preheated oven for 15 minutes.
- Remove tarts from oven; lower oven temperature to 375°F [190°C].
- Prepare filling.
- Evenly sprinkle grated Swiss cheese over the bottom of pre-baked tart shells.
- Evenly fill tart shells with apple slices and back bacon dices.
- Evenly pour beaten eggs mixture into filled tarts shells.
- Bake into over for approximately 30 minutes, until set in the middle.
- Remove from oven and leave to cool until lukewarm before serving, unmolded if desired.
Filling
- Melt butter or margarine into a casserole.
- Brown back bacon dices, stirring for 1 minute.
- Add apple slices.
- Cover casserole and cook apple slices for approximately 10 minutes, until translucent; remove from heat and reserve.
- Into a bowl, beat together eggs and egg yolk.
- Mix in flour, half-and-half, salt, nutmeg, caraway seeds and dry mustard until well blended.
