Pork or Ham Fried Rice

  • 4 tablespoons [60 mL] cooking oil
  • 4 cups [1 L] boiled rice
  • 1 cup [250 mL] small cubes cooked pork or lean ham
  • 1 teaspoon [5 mL] salt
  • Pinch of pepper
  • 2 spring onions, diced
  • 2 eggs, beaten
  • 2 tablespoons [30 mL] soy sauce
  • Heat oil in a frypan; add rice, stirring often, until lightly browned.
  • Add meat cubes, salt, pepper and onion dices.
  • Stir-fry for 1 minute.
  • Make a hole in the centre; pour in beaten eggs.
  • Break-up cooked eggs and thoroughly mix all ingredients together.
  • Mix in soy sauce and serve.
