- 4 tablespoons [60 mL] cooking oil
- 4 cups [1 L] boiled rice
- 1 cup [250 mL] small cubes cooked pork or lean ham
- 1 teaspoon [5 mL] salt
- Pinch of pepper
- 2 spring onions, diced
- 2 eggs, beaten
- 2 tablespoons [30 mL] soy sauce

- Heat oil in a frypan; add rice, stirring often, until lightly browned.
- Add meat cubes, salt, pepper and onion dices.
- Stir-fry for 1 minute.
- Make a hole in the centre; pour in beaten eggs.
- Break-up cooked eggs and thoroughly mix all ingredients together.
- Mix in soy sauce and serve.
