Armenian Rice

  • 3 cups [750 mL] long-grained white rice
  • 1/2 pound [454 g] tiny lamb dices
  • 1/2 cup [125 mL] finely chopped onion
  • 1/2 sweet green pepper, membranes removed and seeded, chopped
  • 1/2 sweet red pepper, membranes removed and seeded, chopped
  • 1 clove garlic, crushed
  • 1 teaspoon [5 mL] marjoram
  • 1 teaspoon [5 mL] thyme
  • 1/4 cup [60 mL] freshly chopped parsley
  • Oil
  • Boil rice.
  • Meanwhile, brown lamb dices into just a little oil, into a frypan over medium heat; remove lamb dices from frypan and reserve.
  • Into the same frypan, brown together chopped onion, chopped sweet green and red peppers and crushed garlic.
  • Mix together all ingredients into a microwave-safe dish.
  • Reheat into microwave oven on 'MEDIUM', until hot.
