Armenian Rice

  • 3 cups [750 mL] long-grained white rice
  • 1/2 pound [454 g] lamb, cut in very small pieces
  • 1/2 cup [125 mL] onion, finely chopped
  • 1/2 green pepper, chopped
  • 1/2 sweet red pepper, chopped
  • 1 clove of garlic, crushed
  • 1 teaspoon [5 mL] marjoram
  • 1 teaspoon [5 mL] thyme
  • 1/4 cup [60 mL] parsley, chopped
  • Oil
  • Boil rice.
  • Meanwhile, brown meat in just a little oil, over medium heat; set aside.
  • In the same pan, brown chopped onion, chopped peppers and crushed garlic.
  • In a microwave dish, mix together all ingredients.
  • Reheat in microwave oven at medium, until hot.
