Green Rice

  • 1 1/2 cups [375 mL] well-drained boiled white rice
  • 1 cup [250 mL] milk
  • 4 tablespoons [60 g] butter, melted
  • 1/2 cup [115 g] grated Swiss cheese
  • 1/2 onion, chopped
  • 1/2 cup [125 mL] freshly cleaned chopped spinach leaves
  • 1 egg, beaten
  • Butter
  • Preheat oven to 350°F [180°C].
  • Butter a large casserole.
  • Combine boiled rice, milk, melted butter, grated Swiss cheese, chopped onion and spinach and beaten egg.
  • Pour into buttered casserole.
  • Bake into preheated oven, for 40 minutes.
