Oven-Baked Vegetable Rice

  • 3 cups [750 mL] long grain rice [raw]
  • 4 cups [1 L] water
  • 1/2 cup [125 mL] oil
  • 1/4 cup [60 mL] soy sauce
  • 1/4 cup [60 mL] liquid beef broth concentrate
  • 2 cups [500 mL] chopped celery
  • 8 to 10 green onions, chopped [white and greeen]
  • 1 red bell pepper, cubed
  • 1 green bell pepper, cubed
  • 2 cups [500 mL] freshly chopped mushrooms
  • 3 carrots, peeled and cubed
  • 2 tablespoons [30 mL] garlic salt
  • Preheat oven to 325°F [160°C].
  • Into a roasting pan, mix together all ingredients.
  • Bake into preheated oven for 1 hour.
