Chicken Fried Rice with Bacon

  • 1/2 pound [227 g] butter
  • 5 onions, chopped
  • 3 sweet green peppers, chopped
  • 1/2 celery head, finely minced
  • 3 cups [750 mL] long-grain rice
  • 1/2 pound [227 g] fried bacon, crumbled
  • 2 cups [500 mL] cooked chicken cubes
  • Soy sauce
  • Melt butter; slowly cook chopped onions, chopped green peppers and minced celery; set aside.
  • Boil rice until tender.
  • Well mix together boiled rice, bacon crumbs, chicken cubes and reserved vegetables.
  • Reheat over low heat.
  • Stir in soy sauce, to taste.
